Oven-Fried Feta Rolls with Chili Honey

Ingredients
  

Feta Rolls
  • 8 oz block feta cheese cut into sticks
  • 10 sheets phyllo dough thawed
  • 0.5 cup extra virgin olive oil or melted butter
  • 1 tsp fresh thyme leaves optional
  • 0.25 tsp black pepper freshly cracked
Chili Honey Glaze
  • 0.33 cup honey
  • 1 tsp red pepper flakes adjust to taste
  • 1 tbsp sesame seeds white or black

  • Pastry brush

  • Damp Kitchen Towel

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the block of feta cheese into rectangular sticks roughly 3 inches long and 1/2 inch thick. Pat dry.
  3. Lay out one sheet of phyllo dough (keep others covered with a damp towel). Brush lightly with olive oil. Layer a second sheet on top and brush again.
  4. Cut the layered phyllo stack in half to make two long strips.
  5. Place a piece of feta at the bottom of a strip, season with pepper and thyme. Fold bottom up, sides in, and roll tightly into a cigar shape.
  6. Place rolls seam-side down on the baking sheet. Brush exteriors generously with oil and sprinkle with sesame seeds.
  7. Bake for 15-20 minutes until deep golden brown and crispy.
  8. Warm the honey and mix with chili flakes. Drizzle generously over the hot rolls before serving.

Notes

Thaw phyllo dough in the fridge overnight for best results. Do not rush thawing or it will become gummy.
