Oven Fried Feta Rolls with Chili Honey

Crispy phyllo pastry rolls filled with warm salty feta, baked to golden perfection and drenched in a sticky, spicy hot honey glaze with sesame and thyme.

Ingredients
  

The Rolls
  • 10 sheets phyllo dough thawed
  • 8 oz feta cheese block, cut into batons
  • 0.5 cup unsalted butter melted
  • 1 tbsp sesame seeds white and black mix
Chili Honey Glaze
  • 0.33 cup honey high quality
  • 1 tsp red chili flakes adjust to spice preference
  • 1 tsp fresh thyme leaves
  • 1 tsp apple cider vinegar optional, for tang

Equipment

  • Pastry brush
  • Small Saucepan
  • Knife

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unroll phyllo dough and keep covered with a damp towel to prevent drying.
  3. Take one sheet of phyllo, brush with melted butter. Place another sheet on top and brush again. Cut vertically into two long strips.
  4. Place a piece of block feta at the bottom of a strip. Fold sides in and roll up tightly.
  5. Place rolls seam-side down on the baking sheet. Brush tops with remaining butter and sprinkle with sesame seeds.
  6. Bake for 18-22 minutes until deep golden brown and crispy.
  7. While baking, warm the honey and chili flakes in a small saucepan over low heat until runny.
  8. Transfer hot rolls to a plate, drizzle generously with hot honey, garnish with fresh thyme, and serve immediately.

Notes

Work quickly with the phyllo dough so it doesn't crack.
