Ingredients
  

Base Ingredients
  • 2 cups frozen pineapple chunks must be completely frozen
  • 1 cup frozen mandarin oranges or frozen orange segments
  • 0.5 cup canned coconut milk full-fat, use the thick cream from the top
  • 0.25 cup orange juice plus 1-2 tbsp more if blender gets completely stuck
  • 2 tbsp powdered sugar or agave syrup (optional, to taste)
  • 1 tsp vanilla extract
Garnish
  • 4 slices fresh orange for serving

Equipment

  • High-powered blender or food processor
  • Silicone spatula
  • Piping bag
  • Large star tip (Wilton 1M)

Method
 

  1. Place the frozen pineapple chunks, frozen mandarin oranges, coconut milk, orange juice, and vanilla extract into a high-powered blender or large food processor.
  2. Pulse a few times to break up the large chunks of frozen fruit. Then, turn the machine to medium speed.
  3. If using a blender, use the tamper to push the fruit down into the blades. If using a food processor, stop every 20-30 seconds to scrape down the sides with a silicone spatula. Do not add extra liquid unless absolutely necessary.
  4. Continue blending until the mixture is completely smooth, thick, and creamy, resembling soft-serve ice cream. Taste, and add powdered sugar if desired, blending for 10 more seconds to combine.
  5. Transfer the mixture into a piping bag fitted with a large star tip. Place the piping bag in the freezer for 15-20 minutes to firm up slightly.
  6. Pipe the Dole Whip in a circular, upward motion into cups or bowls. Garnish with a fresh orange slice and a straw. Serve immediately.

Notes

Patience is key during blending! Rely on scraping the sides rather than adding more liquid, which will result in a runny, soupy dessert rather than a thick soft serve.
