Method
- Place your serving glass in the freezer for 10 minutes to chill.
- In a blender, combine the coconut rum, pineapple juice, cream of coconut, and ice.
- Blend on high speed until the mixture is smooth, slushy, and creamy.
- Pour the pale yellow mixture into the chilled glass, leaving a little room at the top.
- Slowly pour the Blue Curaçao over the top or down the side of the glass to create a swirl or floating layer effect.
- Garnish with a fresh pineapple wedge and a blackberry. Serve immediately with a straw.
Notes
For a greener drink, blend the Blue Curaçao in with the other ingredients.
