Ingredients
  

Cocktail Base
  • 2 oz coconut rum like Malibu
  • 3 oz pineapple juice chilled
  • 1 oz cream of coconut sweetened (Coco Lopez or similar)
  • 1.5 cups ice crushed preferred
The Swirl & Garnish
  • 1 oz blue curaçao
  • 1 wedge pineapple fresh
  • 1 blackberry optional

Equipment

  • Blender
  • Jigger or Measuring Cup
  • Stemless Wine Glass

Method
 

  1. Place your serving glass in the freezer for 10 minutes to chill.
  2. In a blender, combine the coconut rum, pineapple juice, cream of coconut, and ice.
  3. Blend on high speed until the mixture is smooth, slushy, and creamy.
  4. Pour the pale yellow mixture into the chilled glass, leaving a little room at the top.
  5. Slowly pour the Blue Curaçao over the top or down the side of the glass to create a swirl or floating layer effect.
  6. Garnish with a fresh pineapple wedge and a blackberry. Serve immediately with a straw.

Notes

For a greener drink, blend the Blue Curaçao in with the other ingredients.
