Ingredients
  

The Cheese
  • 12-16 sticks low-moisture mozzarella string cheese unwrapped
  • 0.5 cup cornstarch
The Breading
  • 1 cup all-purpose flour
  • 3 large eggs beaten
  • 2 tbsp milk
  • 2 cups panko breadcrumbs
  • 1 cup Italian breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
Nashville Hot Glaze
  • 0.5 cup frying oil hot, from the pot
  • 2-4 tbsp cayenne pepper adjust to taste
  • 2 tbsp brown sugar packed
  • 1 tbsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 0.5 tsp salt

Equipment

  • Deep Fryer or Dutch Oven
  • Baking sheet
  • Wire rack
  • Whisk
  • 3 Shallow Bowls

Method
 

  1. Set up a breading station: one bowl with cornstarch, one with beaten eggs and milk, and one with panko, Italian crumbs, and spices.
  2. Coat cheese sticks in cornstarch, then dip in egg wash, then press into breadcrumbs.
  3. Repeat the egg and breadcrumb steps (double dredge) to ensure a thick coating.
  4. Place breaded sticks on a parchment-lined sheet and freeze for at least 2 hours until solid.
  5. Heat oil in a heavy pot to 375°F (190°C).
  6. Fry sticks in batches for 2-3 minutes until golden brown. Drain on a wire rack.
  7. In a heat-proof bowl, mix cayenne, brown sugar, paprika, garlic powder, and salt.
  8. Carefully ladle 1/2 cup of the hot frying oil into the spices and whisk until smooth.
  9. Brush the hot glaze over the fried mozzarella sticks and serve immediately with ranch.

Notes

Ensure the cheese is completely frozen before frying to prevent leakage.
