Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cornmeal, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and honey until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the butter mixture and beat until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Scoop the dough into 1.5 tablespoon-sized balls and roll them in the extra granulated sugar.
- Place on baking sheets 2 inches apart and bake for 10-12 minutes, or until edges are set and golden but centers are still soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a honey butter glaze, whisk 1 tbsp honey, 1 tbsp melted butter and 1/4 cup powdered sugar, then drizzle over warm cookies.
