Method
- Preheat oven to 325°F and line your baking pan with parchment paper.
- Combine chocolate crumbs and melted butter; press firmly into the bottom of the pan. Bake for 10 mins.
- Beat softened cream cheese and sugar until smooth. Mix in sour cream and peppermint extract.
- Add eggs one at a time on low speed just until combined.
- Fold in chocolate chips and green food coloring if desired. Pour over crust.
- Bake for 50 minutes. Let cool in oven with door cracked for 30 minutes.
- Chill in the refrigerator for at least 6 hours or overnight.
- Slice into bars and garnish with whipped cream and mint leaves.
