Method
- Preheat oven to 400°F (200°C). Brush naan bread lightly with olive oil.
- Place naan directly on oven rack (or on baking sheet) and bake for 3-5 minutes until warm and edges are slightly crisp.
- While bread toasts, chop cucumbers, tomatoes, onions, and parsley.
- Remove bread from oven. Immediately spread a generous layer of hummus over the surface.
- Top with cucumbers, tomatoes, red onions, and olives.
- Sprinkle crumbled feta cheese and fresh parsley over the top.
- Finish with a sprinkle of dried oregano and a drizzle of extra virgin olive oil.
- Serve immediately with a side of tzatziki sauce.
Notes
To remove the bite from raw onions, soak slices in ice water for 10 minutes before serving.
