Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Peel carrots and trim ends. Pat dry with paper towels.
- Wrap one slice of bacon spirally around each carrot, securing the ends by tucking or placing seam-side down on the sheet.
- In a small bowl, mix maple syrup and pepper. Brush half of the mixture over the carrots.
- Roast for 20-25 minutes. Remove from oven and brush with remaining maple syrup. Sprinkle with brown sugar if using.
- Return to oven for 10-15 minutes until bacon is crispy and carrots are tender.
- Let rest for 5 minutes before serving. Garnish with fresh thyme.
Notes
Use similar sized carrots for even cooking. Do not use thick-cut bacon.
