Ingredients
  

Main Ingredients
  • 1 lb whole carrots peeled and trimmed
  • 10 slices bacon standard cut
  • 0.33 cup maple syrup pure
Optional Seasoning
  • 2 tbsp brown sugar optional
  • 0.5 tsp black pepper cracked
  • 1 handful fresh thyme for garnish

Equipment

  • Baking sheet
  • Parchment paper
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Peel carrots and trim ends. Pat dry with paper towels.
  3. Wrap one slice of bacon spirally around each carrot, securing the ends by tucking or placing seam-side down on the sheet.
  4. In a small bowl, mix maple syrup and pepper. Brush half of the mixture over the carrots.
  5. Roast for 20-25 minutes. Remove from oven and brush with remaining maple syrup. Sprinkle with brown sugar if using.
  6. Return to oven for 10-15 minutes until bacon is crispy and carrots are tender.
  7. Let rest for 5 minutes before serving. Garnish with fresh thyme.

Notes

Use similar sized carrots for even cooking. Do not use thick-cut bacon.
