- In a small bowl, whisk together all the Malibu Sauce ingredients (mayonnaise, yellow mustard, Dijon mustard, honey, and garlic powder). Store in the refrigerator.
- Pound the chicken breasts to an even 1/2-inch thickness. Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts.
- Cook for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F).
- Turn off the heat. Top each chicken breast with one slice of ham and one slice of Swiss cheese.
- Cover the skillet with a lid for 1-2 minutes until the cheese is melted and bubbly.
- Drizzle with Malibu sauce, garnish with fresh parsley, and serve warm.
Notes
You can also place the skillet under the oven broiler for 1-2 minutes to melt and slightly brown the cheese.
