Ingredients

Chicken & Toppings
  • 4 boneless skinless chicken breasts pounded thin
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 slices ham Black Forest or Honey
  • 4 slices Swiss cheese
  • 1 tbsp fresh parsley chopped, for garnish
Malibu Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp honey
  • 0.5 tsp garlic powder

Equipment

  • Large Skillet
  • Meat Mallet
  • Mixing bowls

Method

  1. In a small bowl, whisk together all the Malibu Sauce ingredients (mayonnaise, yellow mustard, Dijon mustard, honey, and garlic powder). Store in the refrigerator.
  2. Pound the chicken breasts to an even 1/2-inch thickness. Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts.
  4. Cook for 4-5 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  5. Turn off the heat. Top each chicken breast with one slice of ham and one slice of Swiss cheese.
  6. Cover the skillet with a lid for 1-2 minutes until the cheese is melted and bubbly.
  7. Drizzle with Malibu sauce, garnish with fresh parsley, and serve warm.

Notes

You can also place the skillet under the oven broiler for 1-2 minutes to melt and slightly brown the cheese.
