- Preheat oven to 375°F (190°C).
- In a large bowl, beat softened cream cheese until smooth, then stir in sour cream and spices.
- Fold in 1.5 cups cheddar, all the Monterey Jack, 3/4 of the bacon, and most of the green onions.
- Spread mixture into a baking dish and top with remaining 0.5 cup of cheddar.
- Bake for 15-20 minutes until bubbling and melted.
- Garnish with remaining bacon and green onions before serving with crackers or chips.
Notes
Use freshly shredded cheese for the best melt and glossy finish.
