- Line a plate or baking sheet (that fits in your freezer) with parchment paper.
- In a mixing bowl, beat the softened cream cheese and Greek yogurt until completely smooth and creamy.
- Add the sweetener, vanilla extract, and half of the fresh lemon zest. Beat until well incorporated.
- Using a spatula, gently fold in the dry, fresh blueberries, being careful not to smash them.
- Cover the bowl and chill in the refrigerator for 30-45 minutes until the mixture is firm enough to handle.
- Scoop out tablespoon-sized portions and roll between your palms to form balls. Place on the prepared baking sheet.
- Sprinkle the remaining lemon zest generously over the top of the rolled bites.
- Freeze for 1 to 2 hours until fully set. Let stand at room temperature for 5 minutes before eating. Store leftovers in the freezer.
Notes
Ensure your blueberries are 100% dry before folding them into the batter to prevent the mixture from becoming too wet and difficult to roll.
