Ingredients
  

Bite Base
  • 8 oz full-fat cream cheese softened to room temperature
  • 0.25 cup plain Greek yogurt whole milk preferred
  • 3 tbsp honey or pure maple syrup or powdered sweetener to taste
  • 1 tsp pure vanilla extract
  • 1 tbsp fresh lemon zest divided use
  • 0.75 cup fresh blueberries washed and completely dried

Method
 

  1. Line a plate or baking sheet (that fits in your freezer) with parchment paper.
  2. In a mixing bowl, beat the softened cream cheese and Greek yogurt until completely smooth and creamy.
  3. Add the sweetener, vanilla extract, and half of the fresh lemon zest. Beat until well incorporated.
  4. Using a spatula, gently fold in the dry, fresh blueberries, being careful not to smash them.
  5. Cover the bowl and chill in the refrigerator for 30-45 minutes until the mixture is firm enough to handle.
  6. Scoop out tablespoon-sized portions and roll between your palms to form balls. Place on the prepared baking sheet.
  7. Sprinkle the remaining lemon zest generously over the top of the rolled bites.
  8. Freeze for 1 to 2 hours until fully set. Let stand at room temperature for 5 minutes before eating. Store leftovers in the freezer.

Notes

Ensure your blueberries are 100% dry before folding them into the batter to prevent the mixture from becoming too wet and difficult to roll.
