Method
- In a blender, combine 2 oz light rum, frozen strawberries, and a splash of water. Blend until smooth to create the red layer.
- Divide the red strawberry puree evenly into the bottom of two tall glasses.
- Rinse the blender pitcher out quickly.
- In the clean blender, combine the remaining 2 oz rum, cream of coconut, pineapple juice, and crushed ice. Blend until thick and frosty smooth.
- Slowly pour the white frozen mixture over the red strawberry layer in the glasses, allowing the red to naturally swirl up the sides.
- Top with whipped cream, garnish with a fresh strawberry and a pineapple wedge, add a straw, and serve immediately.
Notes
To make a virgin version, simply replace the rum with extra pineapple juice or water to keep the blended consistency smooth.
