Ingredients
  

Strawberry (Red) Layer
  • 2 oz Light Rum
  • 1 cup Frozen Strawberries
  • 1 oz Water or pineapple juice
Piña Colada (White) Layer
  • 2 oz Light Rum or coconut rum
  • 2 oz Cream of Coconut e.g., Coco Lopez
  • 2 oz Pineapple Juice
  • 1.5 cups Crushed Ice
Garnish
  • 2 dollops Whipped Cream
  • 2 Fresh Strawberries
  • 2 wedges Fresh Pineapple

Equipment

  • High-powered blender
  • Jigger or measuring cups
  • Hurricane or Tall Glasses

Method
 

  1. In a blender, combine 2 oz light rum, frozen strawberries, and a splash of water. Blend until smooth to create the red layer.
  2. Divide the red strawberry puree evenly into the bottom of two tall glasses.
  3. Rinse the blender pitcher out quickly.
  4. In the clean blender, combine the remaining 2 oz rum, cream of coconut, pineapple juice, and crushed ice. Blend until thick and frosty smooth.
  5. Slowly pour the white frozen mixture over the red strawberry layer in the glasses, allowing the red to naturally swirl up the sides.
  6. Top with whipped cream, garnish with a fresh strawberry and a pineapple wedge, add a straw, and serve immediately.

Notes

To make a virgin version, simply replace the rum with extra pineapple juice or water to keep the blended consistency smooth.
