Ingredients
  

Dough
  • 2 cups mashed potatoes cold leftovers
  • 0.5 cup all-purpose flour plus extra for dusting
  • 2 tbsp butter melted
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp baking powder optional
Frying
  • 1 tbsp butter for frying
  • 1 tbsp vegetable oil for frying
  • 2 tbsp fresh chives chopped, for garnish

Equipment

  • Large Skillet or Griddle
  • Mixing Bowl
  • Knife

Method
 

  1. Combine cold mashed potatoes, melted butter, salt, pepper, and baking powder in a bowl.
  2. Gradually sift in flour and mix by hand until a soft, slightly tacky dough forms.
  3. Turn dough onto floured surface, flatten into a 1/2 inch thick circle, and cut into quarters.
  4. Heat butter and oil in a skillet over medium heat.
  5. Fry farls for 3-4 minutes per side until golden brown and crispy.
  6. Garnish with fresh chives and serve warm.

Notes

If using freshly boiled potatoes, ensure they are completely cool before mixing to prevent gummy dough.
