Ingredients
  

Base Layers
  • 3 large bananas ripe but firm, sliced into coins
  • 0.5 cup creamy peanut butter or nut butter of choice
Chocolate Shell
  • 1 cup dark chocolate chips dairy-free if needed
  • 1 tsp coconut oil
  • 1 tsp flaky sea salt Maldon style

  • Parchment paper
  • Microwave-safe bowl

Method
 

  1. Line a large baking sheet with parchment paper to prevent sticking.
  2. Peel and slice bananas into coins. Arrange them on the baking sheet in a single layer, touching tightly to form a rectangle shape.
  3. Drizzle or spread the peanut butter evenly over the banana layer.
  4. Place the baking sheet in the freezer for 30 minutes to let the peanut butter set.
  5. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  6. Pour the melted chocolate over the frozen banana and peanut butter layer, spreading quickly to coat.
  7. Sprinkle immediately with flaky sea salt.
  8. Freeze for at least 1 hour until solid. Break into shards and serve cold.
