Honey Peach Grilled Cheese

A gourmet twist on a classic, featuring sweet juicy peaches, melted Havarti and Cheddar cheese, and a drizzle of honey on crispy sourdough bread.

Ingredients
  

Sandwich Build
  • 4 slices sourdough bread thick cut
  • 3 tbsp unsalted butter softened
  • 1 large peach sliced into wedges
  • 4 slices Havarti cheese or Fontina
  • 0.5 cup sharp white cheddar shredded
  • 2 tbsp honey plus extra for garnish
  • 1 tsp fresh thyme chopped
  • 1 pinch sea salt optional

Equipment

  • Large Skillet or Griddle
  • Spatula
  • Knife
  • Cutting board

Method
 

  1. Wash and dry the peach, then slice into 1/4 inch thick wedges.
  2. Butter one side of each slice of sourdough bread generously.
  3. Place bread butter-side down. Layer Havarti cheese on two of the slices.
  4. Arrange peach slices over the Havarti cheese.
  5. Drizzle honey over the peaches and sprinkle with fresh thyme.
  6. Top with shredded sharp white cheddar and close the sandwich with remaining bread (butter-side up).
  7. Heat skillet over medium-low heat. Cook sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
  8. Remove from heat, drizzle with extra honey, slice, and serve immediately.

Notes

Use a mix of cheeses for the best texture. If peaches are out of season, canned peaches (drained and patted dry) can be used as a substitute.
