- Whisk together mayonnaise, Dijon mustard, yellow mustard, honey, garlic powder, apple cider vinegar, salt, and pepper until smooth. Set aside.
- Bake bacon on a parchment-lined baking sheet at 400°F (200°C) for 15-20 minutes until crispy. Drain on paper towels and snap in half.
- Butterfly the chicken breasts and gently pound to an even 1/2-inch thickness. Cut into 2.5-inch slider-sized pieces.
- Season chicken pieces with smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden and cooked through. Let rest.
- Brush the cut sides of the buns with melted butter and toast lightly in a skillet.
- Assemble sliders: spread honey mustard on both buns. Layer bottom bun with lettuce, chicken, extra sauce, bacon, tomato, and the top bun. Secure with a skewer.
Notes
You can prep the chicken, cook the bacon, and make the sauce up to a day in advance. Assemble right before serving to prevent soggy buns.
