Ingredients
  

Pork
  • 1.5 lbs pork tenderloin sliced into 1-inch medallions (or boneless chops)
  • 1 tbsp olive oil
  • 1 pinch salt and pepper to taste
Honey Garlic Glaze
  • 4 cloves garlic minced
  • 0.25 cup honey
  • 0.25 cup low-sodium soy sauce
  • 1 tbsp apple cider vinegar or rice vinegar
  • 1 tbsp unsalted butter
  • 1 tbsp fresh parsley chopped, for garnish

  • Large Skillet (Stainless Steel or Cast Iron)
  • Small mixing bowl
  • Whisk
  • Tongs

Method
 

  1. Pat the pork medallions dry with paper towels and season both sides with salt and black pepper.
  2. In a small bowl, whisk together the minced garlic, honey, soy sauce, and apple cider vinegar.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the pork for 3-4 minutes per side until deeply golden. Remove pork to a plate.
  4. Reduce heat to medium-low. Pour the sauce mixture into the skillet, scraping up any browned bits from the bottom.
  5. Simmer the sauce for 2-3 minutes until it thickens slightly and becomes syrupy.
  6. Return the pork to the skillet, turning to coat in the sticky glaze. Cook for 1-2 more minutes until pork is cooked through (145°F internal temp).
  7. Turn off heat, stir in the butter until melted for a glossy finish. Garnish with parsley and serve hot.

Notes

Serve over rice or mashed potatoes to soak up the extra sauce. Be careful not to let the honey burn during the reduction step.
