Ingredients
  

Candy Base
  • 2 cups granulated sugar
  • 0.5 cup light corn syrup
  • 0.5 cup water
Popping & Flavor
  • 0.5 tbsp citric acid for inside candy
  • 1 tsp baking soda
  • 1 tsp liquid candy flavoring flavor of choice
  • 3-5 drops food coloring color of choice
Sugar Coating
  • 0.5 cup coarse sanding sugar
  • 0.5 tbsp citric acid for coating mix

  • Heavy-bottomed saucepan
  • 8x8 Baking dish or silicone mold
  • Whisk

Method
 

  1. Prepare an 8x8 baking dish by greasing it heavily or lining with parchment paper. Measure baking soda and 1/2 tbsp citric acid into a small dish.
  2. In a heavy saucepan, combine sugar, corn syrup, and water. Stir gently off heat until moistened.
  3. Place over medium-high heat with a candy thermometer. Boil without stirring until it reaches 300°F (149°C).
  4. Remove from heat immediately. Carefully stir in candy flavoring and food coloring.
  5. Wait 30 seconds, then quickly whisk in the baking soda and 1/2 tbsp citric acid mixture. The sugar will foam up.
  6. Immediately pour into the prepared dish. Let cool for 10-15 minutes until semi-firm.
  7. Score into rectangular strips with a greased knife. Let cool completely (about 2 hours) until hard.
  8. Mix coarse sugar and remaining 1/2 tbsp citric acid in a bowl. Lightly dampen candy strips and roll in the mixture to coat.

Notes

Store in an airtight container at room temperature away from humidity to keep the candy fizzy and crunchy.
