Homemade Pineapple Soft Serve in a Pineapple Bowl

Ingredients
  

Serving Vessel
  • 1 whole large ripe pineapple for making bowls
Soft Serve Filling
  • 4 cups frozen pineapple chunks must be frozen solid
  • 0.5 cup full-fat coconut milk or vanilla ice cream
  • 0.25 cup pineapple juice add more only if needed for blending
  • 1 tbsp fresh lime juice
  • 1 pinch salt

Equipment

  • High-powered blender or food processor
  • Large Chef's Knife
  • Paring Knife
  • Piping bag with star tip (optional)

Method
 

  1. Lay the fresh pineapple on its side and slice it completely in half lengthwise, right through the green crown.
  2. Using a paring knife, carefully score the flesh around the inside edge of each pineapple half. Scoop out the fruit to create two hollow bowls. Place bowls in the freezer to chill.
  3. In a high-powered blender, add the frozen pineapple chunks, coconut milk, pineapple juice, lime juice, and a pinch of salt.
  4. Blend on low to start, using a tamper tool to push the fruit down. Stop and scrape the sides frequently if you don't have a tamper.
  5. Gradually increase speed and blend until the mixture is completely smooth and thick like soft serve ice cream.
  6. Transfer the mixture to a piping bag with a large star tip (or just use an ice cream scoop).
  7. Pipe or scoop the soft serve generously into the chilled, hollowed-out pineapple bowls.
  8. Stick spoons directly into the soft serve and enjoy immediately before it melts!

Notes

If the soft serve gets too melty during blending, put the blender pitcher in the freezer for 20 minutes before piping.
