Homemade Japanese Agar Fruit Jellies

Ingredients
  

Jelly Base
  • 2 tsp agar-agar powder do not use flakes
  • 1.5 cups filtered water
  • 2 cups granulated sugar
Flavoring & Colors
  • 1 tsp candy flavoring oils divided into 4 flavors (e.g., melon, strawberry, orange, grape)
  • 4 drops gel food coloring pink, green, orange, purple
  • 0.5 tsp citric acid optional, for tartness

Equipment

  • Heavy-bottomed saucepan
  • Whisk
  • Square silicone molds or 8x8 glass pan
  • Clear cellophane candy wrappers

Method
 

  1. Line an 8x8 baking dish with parchment paper or lightly oil a square silicone cube mold.
  2. In a saucepan, whisk the agar-agar powder into the cold filtered water. Let sit for 5 minutes to hydrate.
  3. Bring the water and agar to a rolling boil over medium-high heat, whisking constantly. Boil vigorously for 2 to 3 minutes.
  4. Add the granulated sugar and stir until fully dissolved. Return to a boil and simmer for 2 more minutes until the liquid is clear and slightly syrupy.
  5. Remove from heat and quickly divide the hot syrup into 4 separate bowls.
  6. Quickly whisk in 1/4 tsp of a different flavor extract and a drop of coordinating food coloring into each bowl. Add a pinch of citric acid if using.
  7. Pour the colored mixtures into your prepared molds. Let set at room temperature for 2 to 3 hours until completely firm.
  8. Remove from molds, cut into uniform bite-sized cubes with a sharp knife, and wrap individually in clear cellophane candy wrappers.

Notes

Agar-agar sets at room temperature. You must work quickly when dividing and coloring the syrup. Once set, these candies are shelf-stable and do not need refrigeration.
