Ingredients
  

For the Fries
  • 3 large Russet potatoes cut into 1/2-inch sticks
  • 3 tbsp extra virgin olive oil
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
For the Toppings
  • 0.5 cup feta cheese crumbled
  • 0.25 cup red onion finely diced
  • 2 tbsp fresh parsley chopped
  • 1 lemon cut into wedges
For the Tzatziki
  • 1 cup plain Greek yogurt whole milk preferred
  • 0.5 cucumber grated and squeezed dry
  • 2 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh dill chopped

Equipment

  • Large baking sheet
  • Mixing bowls
  • Parchment paper

Method
 

  1. Cut potatoes into fries. Soak in cold water for 30 minutes, then drain and pat completely dry.
  2. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  3. Toss the dried potatoes with olive oil, dried oregano, garlic powder, salt, and pepper.
  4. Spread the fries in a single layer on the baking sheet. Bake for 30-35 minutes, flipping halfway, until golden and crispy.
  5. While fries bake, mix the yogurt, completely dried grated cucumber, minced garlic, lemon juice, olive oil, and dill to make the tzatziki. Chill until needed.
  6. Transfer the hot, baked fries to a serving platter.
  7. Immediately top with crumbled feta cheese, diced red onions, and fresh parsley.
  8. Squeeze fresh lemon juice over the top and serve immediately with the tzatziki sauce.

Notes

Ensuring the potatoes are completely dry before baking is the most important step for achieving a crispy fry. Do not skip it!
