- Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven now to heat up.
- In a small bowl, toss the cooked chicken with about 1/4 cup of the BBQ sauce to coat it evenly.
- Roll out or stretch the pizza dough on a floured surface to your desired thickness (approx. 12 inches).
- Transfer dough to a cornmeal-dusted peel or prepared baking sheet.
- Spread the remaining BBQ sauce evenly over the dough, leaving a 1-inch border for the crust.
- Sprinkle half of the cheese over the sauce, followed by the BBQ chicken and sliced red onions.
- Top with the remaining cheese and the optional smoked gouda if using.
- Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
- Remove from oven, let sit for 2 minutes, garnish with fresh cilantro, slice, and serve.
Notes
For a crispier crust, brush the edges with olive oil before baking.
