Ingredients
  

Pizza Base
  • 1 lb pizza dough store-bought or homemade
  • 1 tbsp cornmeal for dusting
  • 1 tbsp olive oil for brushing crust
Toppings
  • 2 cups cooked chicken cubed or shredded
  • 0.75 cup BBQ sauce divided use
  • 2 cups mozzarella cheese shredded
  • 0.5 cup red onion thinly sliced
  • 0.25 cup fresh cilantro chopped
  • 0.25 cup smoked gouda optional, shredded

Method
 

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven now to heat up.
  2. In a small bowl, toss the cooked chicken with about 1/4 cup of the BBQ sauce to coat it evenly.
  3. Roll out or stretch the pizza dough on a floured surface to your desired thickness (approx. 12 inches).
  4. Transfer dough to a cornmeal-dusted peel or prepared baking sheet.
  5. Spread the remaining BBQ sauce evenly over the dough, leaving a 1-inch border for the crust.
  6. Sprinkle half of the cheese over the sauce, followed by the BBQ chicken and sliced red onions.
  7. Top with the remaining cheese and the optional smoked gouda if using.
  8. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
  9. Remove from oven, let sit for 2 minutes, garnish with fresh cilantro, slice, and serve.

Notes

For a crispier crust, brush the edges with olive oil before baking.
