Ingredients
  

Chicken Base
  • 2 lbs boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp paprika
  • 0.5 tsp black pepper
Gravy Sauce
  • 2 cups chicken broth low sodium
  • 10.5 oz cream of chicken soup healthy/organic option
  • 1 packet poultry gravy mix low sodium preferred
Serving
  • 1 tbsp fresh parsley chopped, for garnish
  • Mashed Potatoes for serving

Method
 

  1. Lightly grease the insert of your slow cooker with non-stick spray.
  2. In a small bowl, mix garlic powder, onion powder, paprika, and pepper. Rub this seasoning over the chicken breasts.
  3. Place the seasoned chicken breasts into the slow cooker.
  4. In a mixing bowl, whisk together chicken broth, cream of chicken soup, and the gravy mix packet until smooth.
  5. Pour the gravy mixture over the chicken.
  6. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is tender.
  7. Shred the chicken directly in the pot or slice it and return it to the gravy.
  8. Serve hot over mashed potatoes, garnished with fresh parsley.

Notes

Store leftovers in an airtight container for up to 3 days. Freezes well for up to 3 months.
