Healthy Baked Feta Potatoes

Ingredients
  

Main Ingredients
  • 2 lbs baby yellow or red potatoes halved or quartered
  • 3 tbsp olive oil divided
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.5 tsp salt adjust to taste
  • 0.5 tsp black pepper freshly cracked
  • 7 oz block feta cheese cubed
Garnish
  • 1 tbsp fresh thyme leaves
  • 1 tsp lemon zest freshly grated
  • 1 wedge lemon for squeezing

Equipment

  • Baking Dish or Sheet Pan
  • Knife
  • Cutting board

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash potatoes and cut them into uniform 1-inch chunks. Pat them dry with a paper towel.
  3. Place potatoes in a large baking dish. Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper. Toss well to coat.
  4. Roast for 30-35 minutes, stirring halfway through, until potatoes are tender and edges are golden brown.
  5. Remove from oven. Scatter the cubed feta cheese over the hot potatoes.
  6. Return to the oven for 10-15 minutes until the feta is warm and slightly soft.
  7. Remove from oven. Garnish with fresh thyme and lemon zest. Serve warm.

Notes

Use a block of feta instead of pre-crumbled for better texture and flavor.
