Method
- Preheat oven to 400°F (200°C).
- Wash potatoes and cut them into uniform 1-inch chunks. Pat them dry with a paper towel.
- Place potatoes in a large baking dish. Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper. Toss well to coat.
- Roast for 30-35 minutes, stirring halfway through, until potatoes are tender and edges are golden brown.
- Remove from oven. Scatter the cubed feta cheese over the hot potatoes.
- Return to the oven for 10-15 minutes until the feta is warm and slightly soft.
- Remove from oven. Garnish with fresh thyme and lemon zest. Serve warm.
Notes
Use a block of feta instead of pre-crumbled for better texture and flavor.
