Sandwich Ingredients
  • 2 slices thick-cut white or sourdough bread
  • 1 tbsp butter or mayonnaise for spreading
  • 0.5 cup mozzarella cheese freshly grated
  • 0.5 cup provolone cheese freshly grated
  • 2-3 slices deli ham or cooked bacon
  • 0.25 cup pineapple chunks patted completely dry
  • 0.25 cup fresh spinach leaves optional

Method
 

  1. Thoroughly pat the pineapple chunks dry with a paper towel to remove excess moisture.
  2. Evenly spread softened butter or mayonnaise on one side of each slice of bread.
  3. Place one slice of bread, butter-side down, in a cold skillet. Layer with half of the grated cheeses.
  4. Add the sliced ham, dried pineapple chunks, and spinach leaves. Top with the remaining grated cheese.
  5. Place the second slice of bread on top, butter-side facing up.
  6. Turn the heat to medium-low. Cook for 3-5 minutes until the bottom bread is golden brown and crispy.
  7. Carefully flip the sandwich using a wide spatula. Cook for another 3-4 minutes until the other side is golden and the cheese is completely melted.
  8. Remove from the pan, let it rest for 1 minute, slice diagonally, and serve immediately.

Notes

If the cheese is not melting fast enough, place a pot lid over the sandwich in the skillet for a minute to trap the heat.
