- Preheat oven to 450°F (230°C). Place the stick of butter in an 8x8 or 9x9 baking dish and melt it in the preheating oven. Remove and set aside.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Pour the cold buttermilk into the dry ingredients and stir gently just until combined. Do not overmix; the dough will be very wet.
- Scrape the dough directly into the baking dish over the melted butter. Spread it evenly to the edges.
- Using a knife, score the wet dough into 9 even squares, cutting all the way to the bottom.
- Bake for 20-25 minutes until the tops are golden brown and puffed.
- Remove from oven, lift biscuits out, and slice in half horizontally. Layer the bottom halves with ham and cheddar cheese.
- Place the top halves back on, set the sandwiches on a baking sheet, and bake for 3-5 more minutes until the cheese is completely melted.
- Garnish the buttery tops heavily with chopped fresh chives and serve immediately.
Notes
Store leftovers in the fridge for up to 3 days. Reheat in a 350°F oven covered with foil for 10-15 minutes. Do not microwave, or the biscuits will become soggy.
