- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Cream butter and sugars until fluffy. Mix in egg and vanilla.
- Combine flour and graham crumbs; gradually add to wet ingredients to form dough.
- Scoop dough onto sheet and bake for 8-10 minutes until set.
- Top each hot cookie with a marshmallow half and broil for 30-60 seconds until toasted.
- Heat heavy cream and pour over chocolate chips and corn syrup. Whisk until glossy.
- Spoon ganache over marshmallows, allowing it to drip down the sides.
- Drizzle with melted white chocolate and sprinkle with extra crumbs. Let set.
Notes
Watch the broiler closely to prevent marshmallows from burning!
