Gooey Fruity Pebbles Treats

Ingredients
  

Treat Mixture
  • 0.5 cup salted butter 1 stick
  • 15 oz mini marshmallows divided (reserve 2 cups for end)
  • 6 cups Fruity Pebbles cereal
  • 1 tsp pure vanilla extract optional

Equipment

  • Large Pot or Dutch Oven
  • 9x13 inch baking dish
  • Rubber Spatula
  • Parchment paper

Method
 

  1. Line a 9x13-inch baking dish with parchment paper and lightly grease it.
  2. In a large pot, melt the salted butter over low heat.
  3. Add all but 2 cups of the mini marshmallows to the melted butter. Stir constantly over low heat until completely melted and smooth. Remove from heat.
  4. Stir in the vanilla extract.
  5. Add the Fruity Pebbles and the reserved 2 cups of mini marshmallows. Gently fold everything together until the cereal is evenly coated.
  6. Transfer the mixture to the prepared baking dish. Lightly grease your hands and VERY GENTLY press the mixture into an even layer. Do not pack it down tightly.
  7. Allow to cool at room temperature for 45 minutes to an hour before slicing into squares.

Notes

Always melt your marshmallows on low heat. High heat will cause the sugars to crystallize and result in hard, crunchy treats instead of soft, gooey ones.
