  • 1.5 lbs large shrimp peeled and deveined, tails on or off
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 cup parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper cracked
Finishing Touches
  • 2 tbsp unsalted butter melted (optional)
  • 1 tbsp fresh parsley chopped
  • 1 wedge lemon for juicing

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a small bowl, whisk together the olive oil, minced garlic, Italian seasoning, salt, and black pepper.
  3. Place the shrimp in a large bowl and pat them very dry with paper towels to ensure they roast rather than steam.
  4. Pour the olive oil mixture over the shrimp and toss to coat evenly. Sprinkle the parmesan cheese over the shrimp and toss again until well combined.
  5. Arrange the shrimp in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  6. Roast for 8-12 minutes, or until the shrimp are pink, opaque, and cooked through (time depends on shrimp size).
  7. Remove from oven. Drizzle with melted butter (if using) and a squeeze of fresh lemon juice. Garnish with chopped parsley and serve immediately.

Notes

Ensure shrimp are fully thawed and patted dry before cooking. Leftovers can be stored in the fridge for up to 3 days.
