- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Wash potatoes and cut them into uniform wedges. If desired, soak in cold water for 30 minutes and pat dry for extra crispiness.
- Place wedges in a bowl, drizzle with olive oil, and season with paprika, salt, and pepper. Toss to coat evenly.
- Arrange wedges in a single layer on the baking sheet, ensuring they do not overlap.
- Bake for 30-35 minutes, flipping halfway through, until golden brown and fork-tender.
- While potatoes bake, whisk together melted butter, minced garlic, parsley, and half of the parmesan cheese.
- Remove potatoes from oven, transfer to a bowl, and toss with the garlic butter mixture.
- Sprinkle with remaining parmesan cheese and serve immediately.
Notes
For best results, use a block of parmesan cheese and grate it yourself.
