- Boil potatoes in salted water for 8-10 minutes until tender; drain.
- Season steak cubes with salt, pepper, onion powder, and thyme.
- Heat oil in a skillet over high heat; sear steak bites in batches for 3-4 minutes total until browned. Remove and set aside.
- In the same skillet, add 1 tbsp butter and sear potatoes until golden and crispy (about 5 minutes).
- Reduce heat to medium; add remaining butter and minced garlic to the potatoes.
- Add steak back to the pan and toss for 1-2 minutes until thoroughly coated in the glossy butter sauce.
- Top with fresh parsley and serve immediately while hot and glistening.
Notes
Ensure steak is dry before searing for the best crust. Use gold potatoes for their naturally creamy texture.
