Ingredients
  

Potato Base
  • 2 lbs baby yellow potatoes halved if large
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 0.5 tsp black pepper freshly cracked
Garlic Butter Mixture
  • 4 tbsp unsalted butter melted
  • 5 cloves garlic finatedly minced
  • 1 tsp dried thyme
  • 2 tbsp fresh parsley chopped for garnish

Equipment

  • Large mixing bowl
  • Baking sheet or roasting dish
  • Chef's Knife
  • Spatula

Method
 

  1. Preheat oven to 400°F (200°C). Wash and dry the baby potatoes.
  2. In a large bowl, combine melted butter, olive oil, minced garlic, salt, pepper, and thyme.
  3. Add the potatoes to the bowl and toss until every potato is thoroughly coated in the butter mixture.
  4. Transfer the potatoes to a baking sheet or roasting dish in a single layer.
  5. Roast for 30–35 minutes, tossing halfway through, until the potatoes are golden brown and crispy.
  6. Remove from oven and immediately garnish with fresh parsley and extra salt if desired.

Notes

For extra crunch, parboil potatoes for 5 minutes before roasting. You can also add Parmesan cheese in the last 5 minutes of cooking.
