Method
- Preheat oven to 400°F (200°C). Wash and dry the baby potatoes.
- In a large bowl, combine melted butter, olive oil, minced garlic, salt, pepper, and thyme.
- Add the potatoes to the bowl and toss until every potato is thoroughly coated in the butter mixture.
- Transfer the potatoes to a baking sheet or roasting dish in a single layer.
- Roast for 30–35 minutes, tossing halfway through, until the potatoes are golden brown and crispy.
- Remove from oven and immediately garnish with fresh parsley and extra salt if desired.
Notes
For extra crunch, parboil potatoes for 5 minutes before roasting. You can also add Parmesan cheese in the last 5 minutes of cooking.
