- In a small bowl, mash softened butter, minced garlic, garlic powder, parsley, and salt until well combined.
- Mix the shredded mozzarella and provolone cheeses together.
- Assemble sandwiches: Place 1/2 cup cheese on a slice of bread, top with 1 cup chicken, then another 1/2 cup cheese. Top with second bread slice.
- Generously spread garlic butter on the top slice of each sandwich.
- Heat skillet over medium-low heat. Place sandwiches in pan, butter-side down.
- Butter the top side of the sandwiches while they cook.
- Cover pan and cook 3-5 minutes until bottom is golden and crispy.
- Flip sandwiches and cook uncovered for another 3-4 minutes until cheese is fully melted and chicken is heated through.
- Serve immediately while hot and gooey.
