Ingredients
  

Jelly Base
  • 3 packets unflavored gelatin
  • 0.5 cup cold water for blooming
  • 0.5 cup boiling water
  • 0.5 cup granulated sugar
  • 0.25 cup light corn syrup for gloss
  • 1 tsp citric acid
Colors and Flavors
  • 3 drops food coloring blue, orange, red
  • 1 tsp fruit extracts assorted
Swirl Layer
  • 1 cup mini marshmallows melted

Equipment

  • Medium saucepan
  • Baking sheet
  • Silicone mat
  • Whisk

Method
 

  1. Bloom gelatin in cold water for 5 minutes.
  2. Dissolve sugar and corn syrup in boiling water over medium heat.
  3. Stir bloomed gelatin into the hot syrup until completely melted; add citric acid.
  4. Divide mixture into three bowls and add colors and fruit extracts.
  5. Gently fold melted marshmallows into each color for the opaque swirl effect.
  6. Pour into a lined baking sheet and swirl colors with a toothpick.
  7. Chill in the refrigerator for 4 hours until firm.
  8. Roll the jelly sheet tightly and slice into 1-inch rolls using a sharp knife.

Notes

Grease your knife lightly with oil to ensure clean cuts through the sticky jelly.
