- Bloom gelatin in cold water for 5 minutes.
- Dissolve sugar and corn syrup in boiling water over medium heat.
- Stir bloomed gelatin into the hot syrup until completely melted; add citric acid.
- Divide mixture into three bowls and add colors and fruit extracts.
- Gently fold melted marshmallows into each color for the opaque swirl effect.
- Pour into a lined baking sheet and swirl colors with a toothpick.
- Chill in the refrigerator for 4 hours until firm.
- Roll the jelly sheet tightly and slice into 1-inch rolls using a sharp knife.
Notes
Grease your knife lightly with oil to ensure clean cuts through the sticky jelly.
