Ingredients
  

Fruit Fries
  • 0.25 large seedless watermelon cut into crinkle fries
  • 0.5 whole cantaloupe seeded and cut into crinkle fries
  • 0.5 whole pineapple peeled, cored, cut into crinkle fries
  • 0.5 whole honeydew melon seeded and cut into crinkle fries
Fluffy Lemon Dip
  • 8 oz cream cheese softened to room temperature
  • 0.5 cup heavy whipping cream chilled
  • 0.33 cup powdered sugar
  • 1 tbsp fresh lemon juice
  • 1 tbsp lemon zest plus extra for garnish
  • 0.5 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. In a mixing bowl, beat the softened cream cheese until smooth and free of lumps.
  2. Add the powdered sugar, lemon juice, lemon zest, vanilla extract, and salt to the cream cheese. Mix until well combined.
  3. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the lemon cream cheese mixture until fluffy. Cover and chill in the refrigerator for at least 30 minutes.
  5. Using a crinkle cutter or a sharp knife, slice the prepared watermelon, cantaloupe, pineapple, and honeydew into uniform fry shapes.
  6. Place the chilled lemon dip in a small bowl in the center of a large round platter.
  7. Arrange the fruit fries in a circular color wheel pattern around the dip bowl. Garnish dip with extra lemon zest and serve immediately.

Notes

Be sure to pat your fruit fries dry with a paper towel before arranging them on the platter to prevent excess juices from pooling.
