Ingredients
  

Base Drink
  • 1 can (13.5 oz) full-fat coconut milk chilled
  • 0.5 cup fresh lemon juice about 3-4 lemons
  • 0.33 cup maple syrup or sugar adjust to taste
  • 1 tsp vanilla extract
  • 1 tsp lemon zest optional
  • 3 cups ice cubes
Garnish
  • 1 cup coconut whipped cream optional
  • 2 slices lemon for rim
  • 1 tbsp lemon syrup optional drizzle

Method
 

  1. Place the ice cubes into a high-powered blender.
  2. Pour in the chilled coconut milk, fresh lemon juice, sweetener, vanilla extract, and lemon zest.
  3. Blend on high speed for 30-60 seconds until the mixture is completely smooth and creamy, resembling a milkshake texture.
  4. Taste the mixture. Add more sweetener if it's too tart, or more lemon juice if it's too sweet.
  5. Pour into tall glasses.
  6. Top with a generous dollop of whipped coconut cream and a drizzle of lemon syrup if desired. Garnish with a lemon slice and serve immediately.

Notes

For a lighter version, you can use light coconut milk, but the texture will be less creamy and more icy.
