Method
- Place the ice cubes into a high-powered blender.
- Pour in the chilled coconut milk, fresh lemon juice, sweetener, vanilla extract, and lemon zest.
- Blend on high speed for 30-60 seconds until the mixture is completely smooth and creamy, resembling a milkshake texture.
- Taste the mixture. Add more sweetener if it's too tart, or more lemon juice if it's too sweet.
- Pour into tall glasses.
- Top with a generous dollop of whipped coconut cream and a drizzle of lemon syrup if desired. Garnish with a lemon slice and serve immediately.
Notes
For a lighter version, you can use light coconut milk, but the texture will be less creamy and more icy.
