Fresh and Sweet Kiwi Lemonade

Ingredients
  

Simple Syrup
  • 0.75 cup granulated sugar
  • 0.75 cup water
Lemonade Base
  • 6-8 kiwifruit ripe, peeled
  • 1 cup lemon juice freshly squeezed, about 6-8 lemons
  • 4-5 cups cold water filtered
  • 4 cups ice cubes for serving
  • 1 extra kiwi and lemon sliced for garnish

Equipment

  • Blender or Food Processor
  • Small Saucepan
  • Citrus Juicer
  • Large serving pitcher
  • Fine mesh strainer (optional)

Method
 

  1. In a small saucepan, combine the sugar and 3/4 cup of water. Heat over medium, stirring until the sugar completely dissolves. Remove from heat and let cool to room temperature.
  2. Peel the kiwis and place them in a blender. Blend on high until completely smooth.
  3. Optional: For a smoother drink, press the kiwi puree through a fine mesh strainer to remove the seeds.
  4. Juice the lemons until you have 1 cup of fresh lemon juice, straining out any seeds.
  5. In a large pitcher, combine the cooled simple syrup, kiwi puree, and fresh lemon juice. Stir well.
  6. Pour in 4 to 5 cups of cold water, depending on how concentrated you like your lemonade. Stir vigorously.
  7. Taste and adjust sweetness or tartness if necessary. Chill in the refrigerator for at least 30 minutes.
  8. Serve in glasses filled with ice and garnish with fresh kiwi slices.

Notes

To prevent the ice from watering down the lemonade in the pitcher, freeze some of the lemonade in ice cube trays and use those instead of regular ice.
