Cake Batter
  • 4 tbsp all-purpose flour
  • 4 tbsp granulated sugar
  • 3 tbsp unsweetened cocoa powder high-quality dark or Dutch-processed
  • 0.25 tsp baking powder
  • 0.125 tsp salt optional
  • 4 tbsp milk whole or dairy-free
  • 3 tbsp vegetable oil or melted coconut oil
  • 0.5 tsp vanilla extract
  • 2 tbsp dark chocolate chunks chopped from a bar, not chips
Fudge Sauce & Garnish
  • 1 tbsp chocolate sauce for inside batter, optional
  • 2 tbsp chocolate sauce for drizzle, homemade or store-bought
  • 1 tbsp dark chocolate chunks for top

Method
 

  1. In a wide, microwave-safe bowl, use a fork to thoroughly whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  2. Add the milk, oil, and vanilla extract. Whisk again until the batter is smooth and just combined, making sure not to overmix.
  3. If desired, press a tablespoon of chocolate sauce into the direct center of the batter (do not stir).
  4. Press 2 tablespoons of dark chocolate chunks into the top of the batter.
  5. Microwave on high power for 90 seconds. Check; if it needs more, add 15-second intervals. The surface should look set, but the center will be moist.
  6. Let the bowl rest in the microwave for one minute to finish cooking and to set the fudgy texture.
  7. Drizzle with additional chocolate sauce and top with the remaining chocolate chunks. Serve immediately.

Notes

Microwave power varies; 90 seconds is based on a 1000W model. A wide, shallow bowl works best to avoid overcooking. Serve warm with ice cream for a decadent treat.
