Ingredients
  

For the Rim
  • 1 tsp agave nectar or light corn syrup
  • 1 tbsp sanding sugar mixed pink, gold, green
For the Cocktail
  • 2 oz white rum or vodka
  • 1 oz dragon fruit syrup or high-quality grenadine
  • 1 oz pineapple juice 100% juice
  • 0.5 oz fresh lime juice about half a lime
  • 2 oz lemon-lime soda or sparkling water
  • 1 cup ice clear cubes
  • 1 slice fresh orange thickly sliced for garnish

Method
 

  1. Prepare the rim: Pour a small amount of agave nectar onto a shallow plate, and the colorful sanding sugar onto another. Dip the very edge of your rocks glass into the agave, then immediately into the sugar to coat the rim.
  2. Fill the prepared rocks glass carefully to the top with fresh ice cubes, being careful not to knock off the sugar rim.
  3. In a cocktail shaker, combine the white rum, dragon fruit syrup (or grenadine), pineapple juice, and fresh lime juice.
  4. Add a handful of ice to the shaker, secure the lid, and shake vigorously for 10-15 seconds until well chilled.
  5. Strain the pink liquid into your ice-filled rocks glass.
  6. Top the drink with lemon-lime soda and give it one very gentle stir to combine.
  7. Garnish the edge of the glass with a thick slice of fresh orange and serve immediately.

Notes

To make this a mocktail, simply omit the rum and increase the pineapple juice to 2 ounces.
