Ingredients
  

Salad Base
  • 4 cups watermelon cubed and seedless
  • 3 medium peaches sliced, pit removed
  • 0.25 cup fresh mint leaves roughly chopped or torn
Dressing
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey or agave syrup
  • 1 tsp chia seeds or poppy seeds
  • 1 pinch sea salt to enhance sweetness

Method
 

  1. Prepare the fruit by cubing the watermelon and slicing the peaches into bite-sized pieces. Place them together in a large mixing bowl.
  2. In a small separate bowl, whisk together the fresh lime juice, honey, chia seeds, and a tiny pinch of sea salt until the honey is dissolved.
  3. Pour the dressing over the watermelon and peaches. Toss very gently to combine, ensuring the fruit is coated without being crushed.
  4. Sprinkle the fresh torn mint leaves over the top of the salad and gently fold them in.
  5. For best results, chill the salad in the refrigerator for 20 minutes before serving to let the flavors meld.

Notes

Do not make this salad too far in advance, as the watermelon will release its juices and make the salad soggy. Best consumed within 24 hours.
