Easy Strawberry Cheesecake Sweet Rolls

Ingredients
  

Dough
  • 1 cup warm milk 110°F
  • 2.25 tsp instant yeast 1 packet
  • 0.33 cup granulated sugar
  • 0.33 cup unsalted butter melted
  • 1 egg large
  • 3.5 cups all-purpose flour
  • 1 tsp salt
Filling
  • 8 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 1 tsp vanilla extract
  • 1.5 cups fresh strawberries diced
  • 1 tbsp cornstarch
Glaze
  • 4 oz cream cheese softened
  • 1.5 cups powdered sugar
  • 2 tbsp milk
  • 0.5 tsp vanilla extract

Method
 

  1. In a stand mixer, combine warm milk, 1 tbsp sugar, and yeast. Let sit 5-10 mins to foam.
  2. Whisk in remaining sugar, melted butter, egg, and salt. Gradually add flour and knead for 5-7 mins until smooth.
  3. Place dough in greased bowl, cover, and let rise for 1 hour until doubled.
  4. Beat 8oz cream cheese, sugar, and vanilla for filling. Toss strawberries with cornstarch.
  5. Roll dough to 12x18 inch rectangle. Spread cream cheese filling and top with berries.
  6. Roll tightly into a log and cut into 12 rolls. Place in greased 9x13 pan.
  7. Cover and rise for 30 mins. Preheat oven to 375°F (190°C).
  8. Bake 20-25 mins until golden. Tent with foil if browning too fast.
  9. Whisk glaze ingredients together. Pour over warm rolls and serve.

Notes

Use dental floss to cut the rolls cleanly without squishing the dough.
