Easy Strawberry Cheesecake Sweet Rolls

Ingredients
  

Dough
  • 4 cups all-purpose flour approximate
  • 0.25 cup granulated sugar
  • 2.25 tsp instant yeast 1 packet
  • 1 tsp salt
  • 1 cup whole milk warm (110°F)
  • 0.33 cup unsalted butter melted
  • 1 egg large, room temp
Fillings
  • 1.5 cups fresh strawberries diced small
  • 2 tbsp granulated sugar for strawberries
  • 1 tbsp cornstarch
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar for cheesecake
  • 1 egg yolk
  • 1 tsp vanilla extract
Glaze
  • 4 oz cream cheese softened
  • 2 tbsp butter softened
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1 tsp vanilla extract

Equipment

  • Dental Floss (for cutting)

Method
 

  1. In a stand mixer, combine 3.5 cups flour, sugar, yeast, and salt. Add warm milk, melted butter, and egg. Knead on low/medium speed for 5-7 minutes, adding remaining flour if sticky.
  2. Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours until doubled.
  3. Mix diced strawberries with sugar, cornstarch, and lemon juice in a small bowl. In a separate bowl, beat 8oz cream cheese, sugar, vanilla, and egg yolk for the filling.
  4. Roll risen dough into a 12x18 inch rectangle. Spread cream cheese mixture over dough, then sprinkle with strawberry mixture.
  5. Roll dough tightly into a log. Cut into 12 even rolls using dental floss or a sharp knife.
  6. Place rolls in a greased 9x13 pan. Cover and let rise for 30-45 minutes.
  7. Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown.
  8. Whisk glaze ingredients until smooth. Pour over warm rolls and serve immediately.

Notes

Use dental floss to cut the rolls to keep their round shape perfectly intact.
