Ingredients
  

Fries
  • 28 oz frozen french fries or 4 large russet potatoes, cut
  • 0.5 tsp dried oregano
  • 1 pinch kosher salt to taste
Creamy Sauce & Toppings
  • 0.5 cup plain full-fat Greek yogurt
  • 0.25 cup mayonnaise
  • 2 cloves garlic minced
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp extra virgin olive oil
  • 1 cup feta cheese crumbled from a block
  • 0.25 cup fresh dill chopped
  • 0.25 cup fresh flat-leaf parsley chopped

Method
 

  1. Cook the french fries according to package directions using an oven or air fryer until golden and very crispy.
  2. While fries are hot, transfer to a bowl and toss with dried oregano and a pinch of salt.
  3. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, minced garlic, lemon juice, and olive oil until smooth.
  4. Arrange the hot, seasoned fries on a large serving platter.
  5. Drizzle the creamy yogurt sauce generously over the fries.
  6. Sprinkle the crumbled feta cheese evenly over the sauce.
  7. Garnish with freshly chopped dill and parsley. Serve immediately.

Notes

For best results, buy feta in brine rather than pre-crumbled. It yields a much creamier texture.
