Method
- Blend the red dragon fruit, coconut water, and simple syrup until smooth to create the pink puree. Set aside.
- In a separate container, stir together the mango nectar and orange juice.
- Pour the mango-orange mixture evenly into the bottom of two tall glasses.
- Fill both glasses to the top with crushed ice.
- Slowly pour the blended dragon fruit puree over the back of a spoon onto the ice to create a distinct top layer.
- Garnish with a slice of dragon fruit, an orange slice, and a sprig of mint. Serve immediately.
Notes
Using crushed ice rather than large cubes is highly recommended, as it prevents the layers from mixing too quickly. Pour the top layer very slowly to maintain the aesthetic.
