Method
- In a pitcher, combine mango nectar and lemonade. Stir well. This will be your bottom layer.
- In a blender, puree the red dragon fruit cubes with water (or coconut water) until smooth.
- Fill two highball glasses to the top with ice cubes.
- Pour the mango lemonade mixture into the glasses, filling them about 2/3 full.
- Place a spoon upside down over the ice. Slowly pour the dragon fruit mixture over the back of the spoon to float it on top of the mango layer.
- Garnish with a fresh orange slice and a sprig of mint. Serve immediately with a straw.
Notes
To ensure distinct layers, make sure the bottom liquid has more sugar (is denser) than the top liquid.
