Method
- Divide ground beef into 8 loose balls, approximately 2 ounces each.
- Butter and toast the brioche buns in a skillet until golden brown; set aside.
- Heat a cast iron skillet over high heat until it begins to smoke slightly.
- Place two beef balls on the skillet and smash them very flat using a heavy spatula.
- Season with salt and pepper. Cook for 2 minutes until a deep crust forms.
- Flip the patties and immediately place a slice of cheese on each.
- Stack the patties once cheese is melted and place on the prepared bun with lettuce and tomato.
Notes
Do not season the meat until it is smashed onto the hot pan to maintain the best texture.
