Dolphin Banana Fruit Cups

Ingredients
  

Fruit Base
  • 1.5 cups green grapes washed (halved if for toddlers)
  • 1 cup blueberries washed
  • 0.5 cup red currants optional, washed
Dolphins
  • 3 bananas firm, yellow, with stems attached
  • 3 extra blueberries for the dolphin mouths
  • 1 food safe marker or 6 whole cloves, for the eyes

  • Clear plastic cups
  • Cutting board

Method
 

  1. Wash all the grapes, blueberries, and currants thoroughly and pat them dry.
  2. Fill three clear plastic cups about two-thirds full with a mixture of the grapes, blueberries, and red currants to create the 'ocean'.
  3. Take a banana and cut it in half horizontally. Keep the top half with the stem attached. Repeat for all three bananas.
  4. Using a sharp paring knife, carefully slice the stem of the banana down the middle, about 1 to 1.5 inches deep, to create the dolphin's mouth.
  5. Gently wedge a single blueberry into the sliced opening of each banana stem.
  6. Use a food-safe marker to draw a small dot for an eye on both sides of the banana near the stem, or insert a whole clove into the peel.
  7. Nestle the cut flat end of the banana firmly into the fruit cups so the dolphin appears to be leaping out of the 'water'. Serve immediately.

Notes

To prevent the cut parts of the banana from browning, you can lightly brush the exposed edges with a little bit of lemon juice.
