Ingredients
  

Whip Base
  • 2 cups frozen pineapple chunks fully frozen
  • 0.5 cup pineapple juice chilled
  • 1 cup vanilla ice cream or dairy-free substitute

Method
 

  1. Place the frozen pineapple chunks into the blender canister.
  2. Add the chilled pineapple juice and the vanilla ice cream over the frozen fruit.
  3. Blend on high speed until completely smooth, using a tamper if necessary to push fruit into the blades.
  4. Check consistency; if too soft, add more frozen fruit and blend briefly.
  5. Transfer the mixture into a piping bag fitted with a star tip for the signature swirl look.
  6. Pipe into chilled glasses and garnish with a fresh pineapple wedge.
  7. Serve immediately while the texture is firm and cold.

Notes

For a vegan version, use coconut milk or a dairy-free vanilla frozen dessert in place of ice cream.
