Salad Ingredients
  • 3 cups cooked chicken breast chopped or shredded
  • 1 large English cucumber diced or half-moons
  • 1 cup cherry tomatoes halved
  • 0.5 cup radishes thinly sliced
  • 0.25 cup red onion finely diced (optional)
  • 1 bed salad greens for serving
Tzatziki Dressing
  • 1 cup plain Greek yogurt whole milk or 2%
  • 0.5 cup English cucumber grated and tightly squeezed dry
  • 2 cloves garlic minced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp fresh dill chopped
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • Large mixing bowl

  • Clean kitchen towel or paper towels

Method
 

  1. Prepare the dressing base: Grate half a cucumber. Wrap in a clean towel and squeeze aggressively over the sink to remove as much liquid as possible.
  2. In a bowl, mix the Greek yogurt, squeezed cucumber pulp, minced garlic, olive oil, lemon juice, fresh dill, salt, and pepper. Set aside.
  3. In a large bowl, combine the chopped cooked chicken, sliced English cucumber, halved cherry tomatoes, sliced radishes, and red onion.
  4. Pour the tzatziki dressing over the chicken and vegetables. Gently toss until everything is evenly coated in the dressing.
  5. Chill for 15-30 minutes if time allows to let flavors meld. Serve over a bed of fresh greens or inside a warm pita.

Notes

Squeezing the water out of the grated cucumber for the dressing is mandatory. Skipping this step will result in a watery, soupy salad.
